Put 100g sugar, rum, sherry and spice in the container and leave it for atleast 2 weeks. Stir the container after frequent time period so that it mix well. Now, preheat the oven to 160ºC/325ºF/Gas mark. Grease the pan and line a 25cm/10in round cake tin with a double layer of greaseproof paper. Make mixture of remaining sugar and butter in the beat eggs to make it smooth.
Now add the fruit mixture and vanilla essence in the flour. Stir the same to mix well. Now transfer the material to pan and bake it at 300ºF for 2 hours. Its really a basic and easy Christmas Fruit Cake Recipe for home lovers to make the cake with less time and with home available materials.
