1cup prunes
2/3 cup mixed peel
2 ¼ cups dark soft brown sugar
1tsp mixed spice
1 ¼ cups sherry
90ml rum, plus more if needed
2 cups softened butter
10 eggs beaten
4 cups self-raising flour
1 tsp vanilla essence

Procedure :
First wash all dry fruits, raisins, glace fruit, currants, prunes and mixed peel. After drying chop them in food processor. Now shift the chopped fruit in some air-tight container. Put 100g sugar, rum, sherry and spice in the container and leave it for atleast 2 weeks. Stir the container after frequent time period so that it mix well. Now, preheat the oven to 160ºC/325ºF/Gas mark. Grease the pan and line a 25cm/10in round cake tin with a double layer of greaseproof paper. Make mixture of remaining sugar and butter in the beat eggs to make it smooth.
